Healthy Muesli Bars & Grain Free Granola

I love a slice with a cup of tea after dinner, or pre training, & it's a brilliant quick go-to snack for my ravenous child straight after school.
DRY INGREDIENTS
1/2 cup sliced roasted almonds
1/2 cup hemp seeds
1/2 chia seeds
1/2 cup puffed rice
1/2 cup cranberries (could use saltanas, dates, apricots etc)
1/2 cup blanched almond flakes
1/2 cup mixture of pepitas and sunflower seeds
1/2 cup desiccated or shredded coconut
1/2 cup vegan choc chips
WET INGREDIENTS
1/2 cup coconut oil
1/2 maple or brown rice syrup
1 tsp vanilla essence
2 tbs cacao powder (more or less depending on your desired chocolate flavour)
METHOD
Combine all dry ingredients in a large bowl.
Melt coconut oil and syrup on low heat in saucepan, once melted add vanilla essence & cacao powder and mix to create a chocolate syrup.
Pour chocolate syrup over dry ingredients and mix thoroughly to coat everything.
Line a baking tray with baking paper, pour mixture & flatten out to desired thickness.
Place baking tray in freezer, it should be solid in 1 hour.
Cut into slices, store in an air-tight container in the freezer & take out for a quick energy boost!

Now, here's the best bit. If like me you love granola but hate paying $300 for 300g's of it, then take the above recipe but add this slight tweak:
Use only a 1/4 cup of maple or brown rice syrup but also ADD 1/4-1/2 cup of good quality peanut butter & remove the cacao powder.
Coat the dry ingredients with the coconut peanut butter syrup and place on a lined baking tray.
Slowly roast the ingredients in the oven (160-180 fan forced) until slightly golden (20-30 minutes roughly)
Remove from oven and let the granola completely cool, then place in a glass jar or container & leave in fridge or pantry.
Enjoy with yogurt & berries for a quick easy breaky!
